Actually this is the same recipe as under the lid of Quaker Oats, but we took it up a notch. No raisins, but you could keep those in too! It’s great for the holidays in a treat basket and freezes really well.
The Recipe:
2 sticks butter softened, it says margarine but I think butter is better for this recipe.
1 Cup Firmly Packed brown sugar.
1/2 Cup Sugar
2 eggs
1 Teaspoon vanilla, baking soda and cinnamon
1/2 teaspoon salt (optional)
3 Cups Quaker Oats (quick or old fashioned)
1-1/2 Cups all-purpose flour.
1 bag of Nestle Swirl Chocolate Chips
1 and 1/2 Cups of Coarsely chopped walnuts.
Heat oven to 350.
Beat together butter and sugars till creamy.
Add eggs, and vanilla, beat well.
Add combined flour, baking soda, cinnamon and salt; mix well
Stir in oats, c. chips (and 1 cup raisins if you adding those too), give it a quick mix
Add your walnuts.
Drop by spoonful on ungreased baking sheet
Bake 10 to 12 minutes or until golden brown.
Makes about 4 dozen. If you live in higher altitude increase your flour to 1-3/4 cup.
Happy Baking
